The customs of my hometown Huainan are as follows:

My hometown, Huainan, is located at the foot of Gubagong Mountain and on the bank of Huaihe River. It has a long history, rich products and outstanding people, and is known as colorful Huainan. Here I only introduce one of the five colors, Huainan specialty white tofu. Tofu originated from Liu An, the king of Huainan in the Western Han Dynasty more than two thousand years ago. He made tofu in the process of seeking immortality and alchemy, leaving many magical and beautiful legends.

Huainan tofu is made of sweet spring water from Bagong Mountain and high-quality soybeans produced in Zhunhe River basin, plus traditional techniques passed down from generation to generation. Huainan tofu is crystal clear and delicate in texture. I saw from the internet that tofu is rich in trace elements such as calcium and iron and eight kinds of amino acids necessary for human body. It is not only nutritious, but also recognized as a green food. There are dozens of tofu products in Huainan, which can be made into more than 400 dishes. The tofu feast in Huainan is very famous in China and overseas.

The story goes like this: Liu An, the king of Huainan, and a group of Taoist priests refine elixirs every day. One year passed, two years passed, and one day, suddenly the monks said, Your Majesty, this magical pill has been refined. Liu An was overjoyed, so he opened the pot. The pot is filled with tofu instead of Dan medicine, so the best place to produce tofu is Bagong Mountain, because the tofu there is extracted from the spring water of Pearl Spring.

There are many famous local products in Huainan, my hometown. Among them, Zhongba Gongshan tofu is the most distinctive, and it is a specialty of Huainan. This kind of tofu tastes refreshing and is a must in the tofu industry. There is a mysterious legend about this kind of tofu: According to legend, in remote ancient times, a Huainan man summoned the Eight Immortals to practice the elixir of life, but he did not expect to make a pot of white and tender tofu. In Huainan, a grand banquet is held every year on the day when tofu is born.
