The principle of drying houses in Xinjiang is to use airflow to evaporate water.

In Turpan, Xinjiang, raisins are traditionally made in a dry room. The raisins made by this method are green, crystal clear, not only delicious, but also excellent in appearance, but only in Xinjiang where the autumn climate is dry and the hot air is strong. The bee-eye wall makes the air around the drying room circulate, and the grapes are dried quickly under the high temperature in autumn and the hot air passing through the wall. Generally speaking, air drying can be completed within 30 to 45 days.

In Gobi, fields, villages and other places, people choose places with high terrain, spacious space, convenient transportation and dry ventilation to build unique drying rooms. For ventilation, there are many square flower holes with the same size on the wall of the drying room. The height of air-drying room is generally more than four meters, and the room area varies, so it is appropriate to facilitate fruit hanging.

The roof is generally made of logs as beams, rafters as scaffolding, covered with mats, reeds or branches, and then covered with a layer of 20 cm thick grass mud. Most indoor walls are plastered with grass mud or mortar, and the ground is paved with cement or red bricks. There are many clothes hangers on the rafters of the drying room, which are fixed with branches and iron hooks to hang grapes. The distance between the hanger and the ground is about twenty or thirty centimeters, which is convenient for ventilation and cleaning up the fallen grapes. Hanging a bunch of ripe grapes on it will turn into a green, pearl-like, soft and sweet raisin with rich nutrition in 30-45 days under the blowing of dry and hot wind.

Characteristics of raisins in Xinjiang air-drying room

Seedless grapes: Seedless white grapes are naturally dried in the shade of the drying room, with green color, suitable sweetness and sourness, moderate hardness and the highest quality, and the drying rate is about 25%.

Green raisins from mare's milk: naturally dried in the shade of the drying room, with dark green color, suitable sweetness and sourness, moderate hardness, good variety, large nuts and a drying rate of 20%.

Qiuma milk raisins: Qiuma milk grapes are naturally dried in the shade of air-drying room, with gray-green color, sweet and slightly sour taste, moderate hardness, large grains and drying rate of 20%.
