How is stinky tofu made?
Step 1: Take a catty of tofu as an example. It is best to use brine tofu, because it is not only tough but also delicious. Before use, it is best to wash the tofu and control the moisture. After sitting on the fire and boiling, put the tofu in the drawer for about half an hour (until it is completely steamed).
Step 2: Cut the steamed tofu into small pieces while it's hot, put it in a jar and press the porcelain so that you can put more, cover it with some hemp paper (no hemp paper can be replaced with plastic wrap), then cover it and let it stand in a warm place 15-20 days.
Step 3: It is also the most critical step. 15 days later, let's see if the tofu has "long hair". If it has "long hair", boil some salt water to cool it, and then pour it into the jar. Salt water must be soaked in tofu. Then cover it and leave it for 10 days.
Note: It is best to observe the changes of tofu with a glass jar.
