How to stew pettitoes soup?
Ingredients: 2 trotters, 80g soybeans, 3 slices of ginger, a little salt, 4 pieces of dried tangerine peel, 1 root of rice onion, 8 pieces of pepper, a little cooking wine, a proper amount of white pepper, 2 pieces of aniseed and 5g of medlar.
Steps:
1, pig's trotters are put into the pot with cold water, ginger slices are used to cook wine, and the fire is brought to a boil. Skim the foam in the pot, remove the pig's trotters and wash them for later use.
2. Soak the soybeans overnight (at least 4 hours in advance).
3. Put soybeans (and corn) and trotters into a casserole, add uncooked trotters, and then add onions, ginger, pepper, aniseed, red dates and dried tangerine peel. Bring the fire to the boil and simmer for two hours. If you add soup halfway, you should also use boiled water.
4. Wash the medlar and cut the onion leaves for later use.
5. When the skin can be easily inserted with chopsticks, add proper amount of medlar, pepper and salt, cook for about ten minutes, sprinkle with chopped green onion and take out the pot.
