What shall we choose to make a ditty in China?
Xiaoqu brewing has a long history in China. Because of the different ingredients and brewing technology, they have their own characteristics and varieties.
According to whether Chinese herbal medicines are added or not, it can be divided into medicinal ditty and myrrh ditty, sweet wine ditty and white wine ditty, grain ditty and bran ditty according to main raw materials, Sichuan medicinal ditty, Shantou bran ditty, Xiamen Baiyao ditty and Shaoxing wine medicinal ditty according to regions, and Jiuqu pills, cakes and Sanqu according to shapes.
Traditional Xiaoqu is made from rice flour (rice bran), a small amount of Chinese herbal medicine and Daqu mother, and the culture temperature is artificially controlled. Because the particles are smaller than Daqu, it is called Xiaoqu. The production of Xiaoqu embodies the creative application of unique fermentation technology of microorganisms by working people in China. The microorganisms contained in Xiaoqu mainly include Rhizopus, Mucor and Yeast.
