How to make crispy broth?
First, fry the crispy meat, cut the lean meat and peeled pork belly into slightly thick slices, add cooking wine, salt, sugar, pepper and pepper together with the ribs, pat the green onions into sections, cut the ginger into large pieces, and add marinating for half an hour.
Add the eggs and stir, then add the same amount of starch and flour. The amount of eggs and flour is determined according to the amount of meat and ribs, so that each piece of meat is wrapped with a layer of whole egg paste.
Heat the oil in the pot to 60% heat, fry the ribs and meat one by one, and drain the oil. When the oil temperature rises to 80% heat, pour back the oil and take it out.
Then boil the soup, leave a little base oil in the pot, add ginger and garlic slices and stir-fry until fragrant, add boiling water, add cooking wine, salt and pepper,
Bring to a boil, add crispy meat, and turn to low heat for five minutes. Then, throw the cut wax gourd into the lid and burn it thoroughly. Add chicken essence and sprinkle with chopped green onion.
