Brewing method of grain vinegar

Pulverizing and stirring; Pulverizing rice bran cake, grinding, and sieving to obtain bran cake powder. Every 300 kg of bran cake powder, add 200 kg of water and mix well to make the humidity consistent.

Color before pouring vinegar, add 4 ~ 5 kilograms of fried indica rice powder to every 00 kilograms of raw materials, add appropriate amount of water and mix well, and add it to the raw materials.

Vinegar dipping: Divide 4 cylinders of raw materials into 6 equal parts and put them into a vinegar dipping tank for vinegar dipping. First, plug the drain holes of the vinegar-drenching tanks, then pour 200 kilograms of water into each tank, and after a period of time, open the holes to release vinegar. After the flow, add 250 to 300 kilograms of water and continue to pour vinegar until there is basically no vinegar smell.

Boiling: add 2% or 5% salt to the leached vinegar, then pour the vinegar into a pot and cook until the salt is dissolved to make vinegar.
