Monascus and wine cakes are essential raw materials for wine making. Qingxi Village and Xinmin Village in Zhuanshui Town of our county have the traditional habit of producing red koji and wine cake, which has a production history of several decades. The produced monascus and wine cakes are exported to Guangdong, Fujian, Jiangxi, Hunan and other provinces with high yield and good quality. Mainly produced by family workshops. At present, there are 160 households in Qingxi and Xinmin Village. The annual output of monascus is generally 20-30 tons, with a maximum of 100 tons, and the annual output of wine cakes is 500- 1000 kg.
