Jianshui Roasted Tofu, also known as Lin 'an Tofu, is a traditional China dish in Jianshui County.

Originated from Yunnan local garrison in Ming Dynasty. In the Ming Dynasty, Jianshui Roasted Tofu in Lin 'an City was famous all over Chengnan Township, Yunnan Province. Tofu stalls have been built in Shuicheng streets, food markets, night markets and scenic spots to attract people to live in Xi 'an, which has become a beautiful scenery in the ancient city and a bright spot to attract tourists.

The history of the emergence of Jianshui Longyao can be traced back to the end of Song Dynasty. Nowadays, people usually use modern gasification kiln, and the yield can reach above 95%. However, the yield of dragon kiln usually does not exceed 70%.

However, the Dragon Kiln has its charm. When the temperature of the kiln chamber of the Dragon Kiln reaches 1200℃, the purple pottery will appear strange kiln change, or black, crimson or red-purple, with unexpected magical colors. Jianshui pottery after kiln transformation is as mysterious as a cloud.

It is said that there are 128 ancient wells in Jianshui, but the most famous one is definitely Dabanjing outside the west gate, and the China on the tip of the tongue has made this ancient well famous for more than 600 years.

The most famous is Dabanjing, also known as Popo Spring.

This is the largest water well in the urban area, with a round wellhead and a diameter of more than 3 meters. There is a water temple by the well. Dabanjing well water is clear and soft. It is said that it is used to make tea, and it tastes very sweet. Used to make tofu, tender and delicious. Jianshui's famous Ximen tofu is made of this kind of water.

Besides, there are Longjing, Hongjing, Zhuge Well, Yong Lian and Yongning wells in Jianshui Ancient City. Among them, there are single well, double well, triple well and quadruple well, which are rarely seen in other places.

On the steps of Banjing is Banjing Tofu Workshop, where tofu is being made, and China on the Tip of the Tongue is also on fire. Tofu made here is made of water from a well, so it is very delicious.
