What is the old bread

Preparation of ingredients: bread flour 340g, 140g of low-gluten flour, 20g of milk powder, 94g of granulated sugar, high sugar-resistant yeast 5g, 6g of salt, 55g of butter, lukewarm water 192g, 72g of egg wash, 30g of water

Step 1: Make the leavening first and dissolve the yeast in warm water.

Step 2: Pour in the flour and mix well, no dry powder in sight.

Step 3: Cover with plastic wrap and place in a warm place to ferment until 4 times the size, with a honeycomb shape inside. Since the room temperature was not high that day, I put the leavened head in the oven and fermented it on the fermentation setting for about 90 minutes.

Step 4: Pour the fermented leavened head and the egg, water, sugar and salt from the main dough into a bread bucket.

Step 5: Pour in the powdered milk and flour.

Step 6: Put the bread bucket into the bread machine and cover the splash-proof lid of the bread bucket to prevent the flour from splashing out and dirtying the bread machine when mixing. Select the bread machine's dough program for 10 minutes.

Step 7: After the first mixing, add the butter cut into small pieces and continue to select the mixing program for 18 minutes.

Step 8: When the dough is ready, leave it in the bread drum and ferment for 2 times its size. Do not exceed 30 degrees Celsius.

Step 9: Divide the fermented dough into 6 equal portions, press lightly to deflate, roll out, and cover with plastic wrap.

Step 10: Roll each portion into a rectangle.

Step 11: Roll up from top to bottom and pinch tightly to close.

Step 12: Roll into 60cm strips, joining the ends.

Step 13: Use your right hand to secure the fold, and your left hand to roll the dough into a twist.

Step 14: Tuck the end into the circle at the fold and press it underneath.

Step 15: Place the finished loaf in a square non-stick baking dish.

Step 16: Place in the oven and let rise on the oven's fermentation setting for about 40 minutes. Brush the top of the fermented bread with egg wash.

Step 17: Bake in a preheated 170 degree oven for 30 minutes.

Step 18: The old bread is ready.
