What is the stew made of?

One kind of braised pork is made of a raw material called sweet potato starch, and the other is a broth made of vermicelli and sweet potato starch.

Made from sweet potato starch;

Prepare 100g sweet potato powder and put it into the pot. Be sure to buy this granular one. Then add water, stir well and cook. Then pour in the sweet potato starch that has just been stirred evenly, stir slowly with low fire, and continue to stir slowly until there is no water, from milky white to transparent, turn off the fire and the stew can be done.

Make with broth and vermicelli:

Remove the residue from the brine of the braised pork, then wash the sweet potato vermicelli and put it into the hot brine soup. After stirring for a period of time, the vermicelli will become soft and the soup will be absorbed slowly. Then add some chopped onions, and when the soup is almost finished, add some sweet potato starch, the ratio is basically one to one. Then put the steamer cloth, spread the vermicelli evenly, poke holes with chopsticks and steam in the pot for about an hour, and the stew will be fine.

The origin of braised pork:

Braised pork is a traditional snack in northern China. Dingzhou people "eat braised pork until 99, and then go down." In different places, the practice of braised pork is different.

Different places have different production methods. Sweet potato starch is used for stews in Yantai and Dalian, lean yam noodles for stews in Lingshou, Xingtang and Dingzhou in Hebei, semi-finished vermicelli for stews in Yuzhou, Henan, and starch for stews in Dandong. Seasonings include shrimp oil, sesame sauce, garlic juice and so on.
