Black tea belongs to fully fermented tea, and the degree of fermentation is 80% ~ 90%. The quality of black tea fermentation is related to environmental temperature, humidity, oxygen supply and time during fermentation. Generally, the room temperature should be controlled at about 20 ~ 25℃, the fermentation leaf temperature should be kept at about 30℃, and the air humidity should be kept above 90%, which is beneficial to improve the activity of polyphenol oxidase and the formation and accumulation of theaflavins.
A lot of oxygen is consumed in the fermentation process, so good ventilation should be maintained during the fermentation process, and attention should be paid to heat dissipation and ventilation. The thickness of deployed blades affects ventilation and blade temperature. The spreading leaves are too thick, the ventilation is poor, and the spreading leaves are too thin, so the leaf temperature is not easy to maintain. The thickness of spreading leaves is generally 10~20cm, and young leaves and leaflets should be thinly spread; Old leaves and big leaves should be thick.
When the temperature is low, it should be thick; Dilute when the temperature is high. The length of fermentation time varies greatly due to different fermentation conditions, kneading degree, old and tender leaves, tea varieties and production seasons, so moderate fermentation should prevail. The fermentation time of famous Kung Fu black tea is generally 2 ~ 3 hours.
Four kinds of black tea
1, qimen black tea. Qi Hong, or Qi Hong for short, is a treasure of traditional Kung Fu black tea in China. It is a famous historical tea, produced in the late19th century. It is one of the three high-fragrant teas in the world, and has the reputation of "the hero in tea", "the best in the group" and "prince tea".
2. Darjeeling black tea. It is produced in Darjeeling Plateau at the foot of Himalayas in northern West Bengal, India, and is one of the four largest black teas in the world. Darjeeling Black Tea No.2 from May to June has the best quality and is known as "Champagne in Black Tea".
3. Sri Lankan black tea. Produced in the eastern side of the mountainous area of Sri Lanka, it is one of the four largest black teas in the world. The eastern side of the mountains in Sri Lanka is covered with fog all the year round. Because the northeast monsoon blowing in winter brings more rainfall (165438+ 10 to February of the following year), which is not conducive to tea garden production, so the tea quality obtained from July to September is the best.
4. Assam black tea. Produced in Assam Valley in the foothills of Assam Himalayas in northeastern India. The local sunshine is strong, so it is necessary to plant another tree to cover the tea tree moderately; Due to abundant rainfall, the big-leaf tea trees in tropical Assam can thrive.
