How to fry Chili noodles?

Cook as much dried Chili as you eat.

Dried peppers bought in the market should be cleaned first. However, dried peppers used to make Chili noodles cannot be washed with water. If washed with water, let the dried peppers get wet and fill them with water. When frying in an oil pan, the oil will not be heated up because there is water in it, and it will not be effective. So remember not to wash with water.

The cleaning method of dried peppers is actually very simple. Use a big pot cover, put the dried peppers in, and then wipe them clean with a clean cloth. When wiping, if you find that there are pepper heads inside, you should pull out the pepper heads inside in time.

After cleaning it up, you can fry it in the pan. If everyone has fried peanuts, it will be much easier to fry dried peppers. Because fried dried peppers are the same as fried peanuts. They all pour the oil into the pot, and then fry the peppers in the pot. Until the oil is hot, the dried peppers can be cooked (the fire of frying the dried peppers must be small).

Put the fried dried peppers aside to cool (the peppers should not be crushed). When it's cool, pound garlic into Chili noodles. Don't put too much at a time. Too much is not only difficult to pound, but also easy to spill. Then a little bit, mashed into Chili noodles. You can smell the pepper when you pound it.

If you want to eat Chili oil, put the pounded Chili noodles into the seasoning pot. Heat some hot oil, pour it into the pepper pot, and then stir it quickly with chopsticks.

When the hot oil is poured in, stir it evenly with chopsticks, otherwise the hot oil will fry the upper Chili noodles. If possible, it is recommended to stir Chili noodles while pouring hot oil. The stirred Chili oil can be eaten after cooling.
