What is the difference between Daqu liquor and Xiaoqu liquor?

Different characteristics: Daqu liquor is generally rich in fragrance and will become sweet after drinking. For example, Maotai uses high-temperature Daqu; Moderate temperature Daqu in Fenjiu. Xiaoqu liquor also has its own characteristics, that is, mellow taste and elegant aroma. For example, Guilin Sanhua Liquor, Guangxi Xiangshan Liquor and Guangdong Changle Shao are the main representatives of Xiaoqu Liquor.

Of course, Daqu and Xiaoqu are also combined. For example, Dongjiu, one of the eight famous wines in China, is a combination of Daqu and Xiaoqu. Daqu is used to brew glutinous rice, Xiaoqu is used to brew mash, and then layered, placed and fragrant during distillation.

Matters needing attention in Daqu liquor
