Jinhua shortbread culture has a long history

Jinhua shortcake, golden in color, crisp and delicious, is a famous spot of Han nationality in Jinhua, Zhejiang Province, and also a traditional famous specialty for giving to relatives and friends. Its stuffing is mainly dried vegetables, so it is also called dried vegetable shortcake. The Ming dynasty is famous all over the world, and there is even a legend of Li Bai's "smelling incense and dismounting".

According to records, Jinhua shortbread was first seen in Wu Zhong, a native of Pujiang, Wuzhou, Southern Song Dynasty. The shortbread he said contains honey, which is slightly different from today's dried vegetables and meat stuffing. Jinhua shortbread developed to 1980s, and through continuous technical improvement, it successfully developed ham shortbread, beef shortbread, sweet shortbread, spicy shortbread, double sesame shortbread, Jiangyan shortbread, braised pork and red temple shortbread.

The charcoal baking was changed to far-infrared oven baking, and non-toxic polyethylene bags were used instead of paper packaging. As early as 1989, Jinhua shortbread won the title of "provincial excellent product". Nowadays, Jinhua shortcake shops are blooming everywhere in Jinhua city, and they are fragrant everywhere, adding the flavor of local customers. At present, there are more than 40 large-scale manufacturers in Jinhua City, with a daily output of 60,000, and established production and marketing links with more than 20 cities across the country.

Jinhua shortbread has a long history. Interestingly, its founder is Cheng, a demon on earth. Cheng, one of the 24 founding fathers of the Tang Dynasty, made a living selling baked wheat cakes in Jinhua in his early years. Once, he made too many cookies and didn't sell them all day. He left the cake behind to continue selling it tomorrow. However, if the cookies go bad, they can't be sold. Therefore, in order to prevent the biscuits from going bad, Cheng put all the biscuits on the stove.

He thought: keep the fire roasting, and the sesame cake will not go bad! The next day, when Cheng got up, he saw that the meat oil in the sesame cake was baked, and the crust was more oily and brittle, all of which were shortcakes. As soon as this cake went on the market, it immediately attracted many people. Everyone saw that Cheng's cakes were very different from before, and they all scrambled to taste them. Cheng shouted at the top of his lungs with joy: "Come and buy it! Sweet and crisp shortbread! "

It's called, many people buy it. People think that the technology is getting better and better. Some cake shop owners also solemnly asked Cheng for the "secret recipe". Cheng burst out laughing and said, "I have no secret recipe! Just a night by the fire. "
