How to make vermicelli in Guangdong?

Method for making vermicelli

1. Take wet starch or dry starch with water content of 45% ~ 50%, slowly add cold water which is about 2.5~3.0 times the amount of starch, continuously stir into a thin paste, add alum water (alum dosage is 300g per 100kg starch), and stir evenly until there are no particles.

2. Take about 60 grams of the prepared powder paste with a powder spoon and shape it, and put it into the turntable. The turntable is a shallow disk made of copper or tin, with a diameter of about 20 cm and a slightly concave bottom. After the batter is added, the tray floats on the boiling water in the pot and is stirred and rotated, so that the batter is evenly spread from the center of the chassis to the periphery under the action of centrifugal force, and at the same time, it is gelatinized and shaped according to the shape and size of the bottom of the rotating tray. When there is no white spot in the center of the powder paste, take it out of the tray, put it in clear water, and cool it for a while, then take out the molded powder skin and put it in clear water for cooling. In the process of molding operation, it is necessary to stir the powder paste in the powder mixing cylinder from time to time to make it thin and uniform. Molding is the key to vermicelli processing. Must be agile and skilled, the amount of paste should be stable, and the rotating water should be uniform to ensure the consistency of the thickness of the vermicelli.

3. When the cooled vermicelli is mature, it can be taken out and put into a cold water tank, floated and cooled, then fished out and drained.

4. Bleaching: Bleaching the prepared wet vermicelli in acid pulp. It can also be bleached in water containing sulfur dioxide (sulfur dioxide solution, that is, sulfurous acid, is prepared by burning sulfur blocks, introducing the generated sulfur dioxide gas into water and letting the water absorb it). Take it out after bleaching and rinse it with clear water.

5. Dry the bleached and washed vermicelli on the bamboo plaque and put it in a ventilated and dry place to dry or dry.
