In my hometown in the countryside, I finished digging sweet potatoes in September. 10, my folks basically have nothing important to do. At this time, I began to make handmade sweet potato powder!

Hand-made sweet potato powder has many processes and is quite complicated, so not every household will cook it, but every year my family will cook some for their own families.

To make handmade sweet potato powder, starch should be taken first, and there are the following steps. Every step is very important and must not be wrong!

The first step is to choose sweet potato. A lot of sweet potatoes are dug home, and the dug sweet potatoes are very perishable. We choose these dug sweet potatoes which are difficult to preserve to obtain starch.

The second step is to wash the sweet potatoes, and put the selected sweet potatoes in a big pool and clean them one by one. When washing sweet potatoes, we will take a big bamboo brush and scrub it back and forth, and we must wash it for more than four or five times.

Step 3, wring the sweet potato, take the washed sweet potato to the machine and grind it, then drum up the ground sweet potato and wring it before doing the next step.

Fourthly, separating starch and precipitating powder. It is very important to prepare these tools, such as a bucket for killing pigs, a big white cloth, a big bucket and a ladle.

Put more than half a bucket of water in a vat, put some sweet potatoes in a vat full of water, put the sweet potatoes on it, mix the sweet potatoes with water by hand or tools, and prepare the king bucket and white cloth after mixing. The function of white cloth is to separate sweet potato water containing starch from sweet potato residue. It takes four people to pull the white cloth, or fix the four corners of the white cloth on the king's bucket. In my hometown, four people usually pull white cloth. One person scoops up sweet potato water and several spoonfuls of sweet potato water, then drops the sweet potato mixed with starch into the king barrel, wrings out the sweet potato residue on the cloth, and then turns the sweet potato residue upside down. This process is repeated until the separation is completed.

Step 5: precipitate the powder. After separating the sweet potato water, powder will precipitate. It will take another day or two to really precipitate the starch. When the water in the king's bucket is clean, we can make starch. When making starch, we first scoop up the water in the king's bucket, then cut it with a knife, cut it into blocks, pick it up and put it in the washbasin.

Step 6: Dry the starch. Prepare drying tools, put a white cloth on the drying tools, and put the starch just taken from the king barrel on the drying tools with the white cloth. It usually takes a week to dry. After drying, white sweet potato powder came.

After drying the sweet potato powder in the sun, at this time, you can make these powders delicious, such as sweet potato powder bracken cake, which is absolutely delicious. Bake a pot, add ginger, garlic and pepper, and it's time to taste the food. Delicious and chewy.
