Advantages:
1. Low water activity, high water insolubility of substrate, easy growth of microorganism, high enzyme activity and rich enzyme system;
2. The fermentation process is extensive and there is no strict aseptic condition;
3. The equipment has simple structure, low investment, low energy consumption and easy operation;
4. The post-treatment is simple, with little pollution and almost no wastewater discharge.
Disadvantages:
1. Limited to microorganisms with low water activity, few choices;
2. Slow fermentation speed and long period;
3. The composition of natural raw materials is complex and sometimes changes, which affects the yield and quality;
4. The process parameters are difficult to detect and control;
5. Less products, more labor and high strength.
