Dingding cake is one of the special snacks of Han nationality in Yichang, Enshi, Jingmen and Jingzhou, Hubei. Dingding cake is made of rice flour, glutinous rice flour and brown sugar powder, put in a special wooden lattice, add a little red osmanthus, put in the bottle of boiling water, accompanied by thick steam. It only takes two or three minutes to make a round small white cake. It is characterized by soft glutinous, clear, sweet and upright taste.
