What are the steps and skills of cooking in pressure cooker?

Many people are a little unclear about the detailed steps of pressure cooker cooking. They don't know how to cook in a pressure cooker, so what are the cooking steps? The following are the cooking steps of pressure cooker compiled by Bian Xiao, hoping to help you.

Steps of pressure cooker cooking 1. Check the pressure cooker, especially the exhaust port, to avoid clogging. Safety should come first. After the inspection, add a bowl of water to the pressure cooker.

2. Put the steam curtain on the pressure cooker.

3. Prepare a stainless steel basin, the size of which can be put into a pressure cooker.

4. A graduated plastic cup for measuring rice and water.

5. Put 2.5 cups of rice into the basin, and add 3.5 cups of water (shown in the plastic cup, about 3-4 people). That is, the volume ratio of rice to water is 1.4: 1.

Here, 1.4: 1 is the usual ratio. Because the water content and water absorption rate of rice are different, it may be necessary to adjust the water content of each bag of rice, and the ratio of water to rice can be adjusted according to the finished product next time. Usually, a bag of rice can be perfectly controlled by trying it three times.

6. Measure the water level with a spoon handle or directly with your fingers, and remember the water level. Measure from the bottom of the basin, not from the top of the rice, because uneven distribution of rice will lead to errors. Fixed in the center of the basin for measurement, because the basin bottom is uneven, there are errors in the measurement at random places.

7. Wash the rice three times, and quickly, so as not to get dirty on the surface of the rice after it is dissolved in water, which will affect the taste. After flushing, add water again to the measured water level. Put it in a pressure cooker.

8. Confirm the water level again. If the water level is not accurate, this is the last chance to adjust.

9. Cover the pressure cooker and add the pressure limiting valve. Unless it is new rice, it is best to soak it for 20-30 minutes. Of course, you don't have to soak rice if you don't have time. The main process of cooking is the gelatinization of rice starch, which requires the participation of water, so it is best to soak it. Usually, rice will reach water absorption saturation within 30 minutes, and long-term soaking will not significantly improve water absorption, so it is not necessary to soak for a long time. After soaking, start heating on high fire.

10. When a large amount of steam discharged from the pressure limiting valve bursts, it turns into a small fire. My experience is that the smallest fire will do, as long as it doesn't go out. Turn down the fire for 20 minutes, then turn off the fire, and then open the cover after natural cooling, and the whole process is completed.

How to cook with a rice cooker 1, measure the rice with a cup and put it in the pot of the rice cooker. Some rice cookers will be equipped with measuring cups in the box, and some rice cookers can directly pour rice into the inner pot for measurement. Usually, the measuring cup that comes with the rice cooker is not the American standard measuring cup (240ml cup) that we usually use, but the original standard measuring cup in the rice cooker industry (one cup is equivalent to 3/4 American standard measuring cup, that is, 180ml). You can also use your own measuring tools. Depending on the kind of rice, a cup of rice can cook about one and a half to three cups of rice. When cooking, don't fill the rice cooker too full to prevent the rice soup from overflowing.

2. Taomi. Most people wash rice before cooking to remove any pesticides, herbicides or other pollutants that may exist. If the mill of the factory is not advanced enough, some rice grains may be broken, and excess starch will be released during cooking, which will make the rice grains stick together. When washing rice, pour drinking water into a bowl filled with rice, or rinse it directly with slow water. When adding water to the bowl, gently shake the rice grains until the rice grains are completely immersed. Drain the water with a sieve, or tilt the pot directly and dump the excess water. At the same time, put your hand against the pot to prevent the rice from flowing out with the water. Repeat the above steps until the rice washing water becomes clear.

Some rice is added with iron, nicotinic acid, vitamin B 1 and folic acid; Washing rice is unnecessary, because water will wash away water-soluble vitamins and minerals. If the inner pot of your rice cooker has a non-stick coating, don't use the inner pot directly when washing rice to prevent the coating from being damaged by rice grains.

Step 3 measure water. Most instructions for electric cookers suggest using cold water. The water consumption depends on the kind of rice and your favorite taste. In many rice cookers, the inside of the inner pot has been engraved with the indicating scale of how many meters and water should be added in advance. Some rice packages will also indicate the water consumption. You can also add water according to the following ratio. Of course, if you like the hard or waxy taste, you can reduce or increase the amount of water at will.

4. Soak the rice in water for about 30 minutes. This step is not necessary, but pre-soaking can shorten the cooking time and make the rice taste softer. According to the above ratio, add water to the rice and then soak it at room temperature. After 30 minutes, it will be directly electrified for cooking.

5. Add seasoning (optional). Before cooking with electricity, you can add a little seasoning to the rice, so that the rice can absorb the aroma of seasoning when cooking. Some people like to add salt. Butter or other edible oil with unique flavor is also very popular. If you are cooking Indian-style rice, you can also add bay leaves or cardamom pods directly to the pot to enhance the flavor.

6. Put the rice grains stuck on the inner pot wall back into the water, and level the rice in the pot with tools. The rice left on the inner pot wall may be burnt. Then wipe the outer wall of the inner pot with a cloth.

Don't shake rice underwater. Otherwise, the starch in the rice grains may be released, and the cooked rice is not as good as ideal.

7. See if there is a special cooking button on your rice cooker. Some rice cookers only have a simple on-off button, and some rice cookers have cooking buttons with different functions, or the option of extending cooking time. In fact, it doesn't matter whether the buttons are chaotic or not, but it's best to find out what function each button represents.

8. Cooking. Put the inner pot into the rice cooker, cover it, plug in the power supply, press the cooking button and turn on the electricity. When the rice is cooked, the cooking button of the rice cooker will pop up automatically, just like a toaster. Some models of rice cookers will automatically keep warm after cooking until you unplug the power.

Don't open the lid when cooking to see if the rice is cooked. The cooking process is deeply influenced by the amount of steam in the pot. Therefore, if the lid is opened in the middle, steam may escape, resulting in poor cooking. When the temperature in the pot is higher than the boiling point of water, the electric cooker will automatically turn off the power (2 12 degrees Fahrenheit or 100 degrees Celsius). This will only happen after the water in the pot evaporates.

9. After the rice is cooked, stew it in the pot for 10 to 15 minutes, and then open the lid (optional). Most of the instructions for the use of rice cookers will be prompted like this, and even some models of rice cookers are designed like this. Of course, you can just open the lid without waiting. Cutting off the power supply or taking the inner pot out of the rice cooker as soon as possible can effectively reduce the situation that rice sticks to the bottom of the pot.

10, stir the rice loosely, and then serve. As long as there is no excess water in the rice, the rice is basically edible. Gently stirring the rice with a rice spoon can release steam and prevent the rice from boiling dry.

How to use 1 and clean the pressure cooker

Before each use, the cover, the main body and the handle should be cleaned to facilitate the closure of the cover. The sealing ring of the unused new pot has high elasticity, and a small amount of cooking oil can be added to the top and bottom of the pot to facilitate the initial opening and closing.

2, put in the material

Food and water should not exceed four fifths of the pot capacity, and water or soup should not be less than 400 ml.

Step 3 close the lid

(1) Before closing the cover, check whether the exhaust pipe is clear, whether the anti-blocking cover is clean, whether the safety valve is in good condition, and whether the float moves freely up and down and is in the descending position.

(2) Place the pot cover flat on the pot body to fix the pot body, and rotate the pot cover until the upper handle and the lower handle completely overlap. At this point, it just moved to the working position and the float valve was completely exposed.

4. Heating

After the cover is covered, it can be heated by high fire. When a small amount of steam is slowly discharged from the exhaust pipe, the pressure limiting valve is buckled on the exhaust pipe, and then the float will rise until it reaches the exhaust pipe. Hissing? After exhausting, the furnace temperature can be appropriately lowered to keep exhausting until cooking is finished.

Cool and deflate

It can be cooled naturally at room temperature after cooking. If you want to eat immediately, you can use the method of forced cooling (that is, shower or soaking in water) to reduce the pressure. After cooling, you can gently lift the pressure limiting valve to release the remaining gas.

Step 6 open the lid

When there is no steam discharged from the exhaust pipe and the float falls, the cover can be opened counterclockwise. If the float does not fall, it proves that there is still pressure in the pot. At this time, the pneumatic interlocking device will play an insurance role and the cover cannot be opened. Don't force the lid open. Press the indicating valve with chopsticks to exhaust the residual gas in the pot, and then open the lid.
