The advantage of oak in brewing wine is that a small amount of air can penetrate into the barrel through the barrel wall, which makes the wine moderately oxidized.

So winemakers will use oak barrels to help wine stabilize its structure and add flavor substances. Oak barrels will give wine flavors of vanilla, caramel and spices. The longer the wine is in contact with oak barrels, the more flavor substances will be developed in the final wine.

An average of 59 gallons of barrels will evaporate 5 to 6 gallons of wine every year, which is why wineries have to fill so many barrels. With the evaporation of wine, water and alcohol are lost, which concentrates the taste and aroma. The lost water and alcohol were replaced by extra wine, which brought more flavors and aromatic compounds.

Disadvantages:

1, there are few high-quality tree species, most of which are imported from Russia and the United States, and some from Turkey, Austria, Germany and Canada.

2. At present, the stability of oak furniture made by many professional manufacturers in China is very high, but it is difficult to remove water because of the hard texture of oak. Furniture made without purified water may begin to deform or shrink and crack after one and a half years.

3. The phenomenon that rubber wood replaces oak is widespread in the market. If the customer's professional knowledge is insufficient, it will directly affect the interests of consumers.

4. Oak sapwood is soft and easy to be attacked by insects.

5, no bearing capacity, usually not used for buildings.
