Simple method for making dried pepper bean curd

Dried pepper bean curd-Features: soft, tender and delicious, spicy and appetizing, easy to operate and easy to see.

The ingredients used are 3 grams of dried bean curd, pepper, pork, onion, ginger, garlic and baking soda.

Seasoning salt, cooking wine, soy sauce, thirteen spices, rice vinegar, chicken essence, starch.

-Start making-

①: First cut the dried bean curd into 5cm strips, and then cut into triangles. (Note that it can be cut into triangles or diamonds, which is convenient for scalding the back after cooking and chopsticks. )

②: Pepper is cut into hob blocks, pork is sliced, onion, ginger and garlic are minced, and garlic is abundant. Note that putting minced garlic is one of the keys to this dish, and dried tofu cannot be separated from minced garlic.

③: Boil water in a pot, add dried bean curd into cold water, boil for 2 minutes, add 3 grams of baking soda, blanch for 20 seconds, take out, and wash with cold water. Note that the cold water of dried tofu is the key. After baking soda was added, it was quickly removed in 20 seconds. )

④: Add a little salad oil to the pot, put the sliced meat into a cold pot with cold oil, and stir-fry over low heat until it becomes discolored. Add onion, ginger and minced garlic and stir-fry until fragrant. Pay attention to half of minced garlic.

⑤: Add dried bean curd and stir-fry, add refined salt, cooking wine, soy sauce, thirteen spices and rice vinegar, add 4 spoonfuls of boiling water, bring to a boil with high fire, and simmer for 3 minutes. Note, cover here and stew for 3 minutes, the dried bean curd will be softer. )

⑥ After 3 minutes, add the pepper pieces. When the soup thickens, add the chicken essence, add the water starch to thicken, add the other half of the minced garlic, and turn it evenly.
