What kind of pasta can flour make?

There are countless kinds of pasta made of flour. Let me share with you three kinds of pasta I often eat: Chongqing miscellaneous sauce noodles, chicken soup wonton, and egg cake.

First course: Chongqing miscellaneous sauce noodles.

The required ingredients are 500g meat stuffing, noodles 100g, and a little green vegetables.

20g of red bean paste, sugar10g, 3 slices of fragrant leaves, 2 star anise, chopped peanuts10g, soy sauce15ml, minced garlic15g, Jiang Mo10g, and sweet potato starch/kloc-0.

Practice steps

★ Stir-fry sauce (only 3 steps)

1. Pour the cooking oil into the pot, and pour the meat stuffing into the pot and stir-fry until the fat in the meat stuffing is clear.

2. Leave the bottom oil in the pot and add sugar. The sugar begins to bubble and turn brown. Add 10g red bean paste, star anise, geranium, Jiang Mo and minced garlic and stir-fry to obtain red oil.

3. Pour in minced meat and stir fry together. Add 10 ml soy sauce to taste, thicken sweet potato starch, and stir-fry in miscellaneous sauce.

4. Seasoning: soy sauce, minced garlic, red pepper, lard, salt1g.

5. Add a proper amount of water to the pot, and the water will open the bottom strip. After the noodles are cooked, blanch the vegetables for 5 seconds, remove them and put them in a seasoning bowl.

6. Spread the noodles with miscellaneous sauce, sprinkle with chopped peanuts and shallots, and mix well to serve.

The second course: chicken soup wonton soup

Ingredients: Half hen, pork stuffing, wonton skin and vegetables.

Seasoned minced garlic, Jiang Mo, onion, salt, white pepper, 1 egg and sweet potato starch.

Practice steps

1. Wash the chicken, put it in a cold water pot, add 2 shallots and ginger slices, bring it to a boil with high fire, skim off the floating foam, and simmer for 30 minutes 1 hour.

2. Mix pork stuffing: add onion Jiang Shui (Jiang Mo, chopped onion, boiled and cooled to make onion Jiang Shui), salt and white pepper to the stuffing, stir until onion Jiang Shui is completely absorbed by the stuffing, and marinate for15min.

3. Beat the eggs into the meat stuffing, put a spoonful of sweet potato starch and stir evenly in one direction.

Step 4 outflank.

5. Seasoning: salt, a spoonful of chicken soup, chopped green onion (with the fragrance of chicken soup, no need for other seasonings)

6. Pour water into the pot, boil the water and put it into the wonton soup until it floats. Add vegetables, blanch for a few seconds, take out the pot and put them in a bowl.

The third way: omelet

Ingredients: common flour 150g, a handful of chopped green onion, 3 eggs.

Ingredients: 2g yeast powder, 3g salt and 3g sugar.

Practice steps

1. Add yeast powder, salt and sugar to the flour, pour appropriate amount of warm water, stir well, make paste, and wake for 30 minutes.

2. Beat the eggs into the batter, add chopped green onion and stir well.

3. Brush a thin layer of oil on the electric baking pan, pour in a tablespoon of batter and wipe it evenly. After frying for 30 seconds, turn it over and fry for another 30 seconds, and so on.
