Hamburger meat made of pork

Before the National Day holiday, my roommate invited several other colleagues to eat and play in my house. They cooked many dishes, including fried tomato boxes and eggplant slices with meat in the middle. However, they didn't use up all the ingredients, and left a lot of semi-finished products in the refrigerator.

During the National Day holiday, my roommates all went home, and only I stayed in Nanjing. Before I left, they asked me to deal with the ingredients in the refrigerator, including the semi-finished products of the French fries box.

However, the National Day holiday is basically cleaning the kitchen and does not need to be handled in the refrigerator. Cleaning the kitchen is a very tiring job. I spent three days cleaning it up. After cleaning the kitchen, I don't even have the heart to cook, so as not to defile the almost spotless kitchen. Of course, I cooked afterwards.

Seeing these minced meat, I think of hamburger meat.

I first learned about hamburger meat on 20 16, when I watched a video about the industrial manufacturing process. When I first saw these three words, I thought they were meat pies in hamburgers, but they turned out not to be-although they were related to hamburgers, they have become a separate food in Japan.

Of course, generally speaking, hamburger meat is made of beef stuffing. However, since I have and only have pork stuffing, I'll make it with pork stuffing.

After the decision, I read the words about hamburger meat in Gong Wei Jia's Today's Meal and wrote down the making process.

However, bread flour is used. At first, I thought it was bread crumbs, and there was no substitute for bread crumbs, so I was going out to buy them. However, just as I was about to go out, I thought of a problem: the word "bread flour" is ambiguous and can refer to two kinds of ingredients:

I watched the opera, and the bread flour in it was "パン powder". Actually, I don't know Japanese, but from the literal meaning and packaging, I think it should be the second one. After all, no one in the family will buy 1kg bread crumbs.

So I'm not going out anymore.

But I'm still not at ease. So, I watched a video tutorial, which was made by a man named Shiba Inuya on "Mile by Mile". In the part about "bread flour", he used bread crumbs.

I also translated "パン powder" into English (since Chinese may be ambiguous, please translate it into English, after all, the English names of these two ingredients are absolutely different), and found that it is "crumbs", that is, crumbs.

Well, I'm still going out.

Most big supermarkets buy bread crumbs. However, I don't really want to travel far (after all, I went to a large supermarket every day during the National Day, and I was very tired), so I went to the supermarket at the gate of the community to see it again. However, I found four supermarkets, and none of them bought crumbs. Helpless, I still have a long way to go.

The nearest RT Mart is only three or four kilometers, so I need to take a bus. It is not difficult to buy bread crumbs, mainly because I bought something and spent some time. In addition, I wanted to cook at noon, but after I went to the supermarket, I thought it was better to cook at night, so I ate mala Tang in the supermarket-I haven't eaten it for a long time.

In addition, there are two kinds of bread crumbs in the supermarket: one is granular bread crumbs (that is, "the child next door is crying") and the other is powdery bread crumbs. I struggled for a long time about which bread crumb to choose. Finally, I decided to buy granular bread crumbs, because granular bread crumbs can be pressed into powder, but powder can't become granules.

In the evening, I started making hamburger meat. The production method mainly refers to the video tutorial mentioned above.

First, let the meat thaw. While thawing, prepare to fry onions.

Cut onions. All the tutorials I saw used white onions, but all I can buy here are red onions. Let's use red onions. When cutting onions, my eyes usually don't feel very painful; But at the last step, my eyes suddenly hurt badly and I had to wash them.

Take two-thirds of onions, add a little salt and fry them until brown. This process takes twenty or thirty minutes. I was going to fry it in a small frying pan, but it was too small after I put it in, so I had to transfer it to a large frying pan.

I have to say, onions fried on a small fire are particularly fragrant.

By this time, the meat had almost thawed. So I began to stir the meat by hand. Since the meat stuffing was added with salt before the study, don't add any more. When stirring, I felt that the meat was not finely chopped, so I chopped it again.

Stir the minced meat until it is thick, then add raw and fried onion, an egg, 20g crumbs and pepper. As for cardamom powder, I didn't add it, because I didn't buy it, and I didn't buy it instead of spiced powder. And pepper. I used white pepper, and I used black pepper in the tutorial. Although it was also in the kitchen, I forgot it for a while and remembered it after eating, but the taste was not too bad.

Then stir well. I thought the onion was too big, so I chopped the meat and stirred it for a long time.

Divide the meat stuffing into four parts, knead each part into a round cake, and beat it with your hands to remove the air from the meat stuffing. Finally, it was made into a meat pie with a thickness of1.5cm. Originally, I planned to make four meat pies, but after making one meat pie, I found that one meat pie was enough, so I decided to make one first, and then make the rest.

Put the meat pie in the refrigerator for half an hour. You can cook side dishes during this time. I simply bring the frozen miscellaneous vegetables, cook them with salt and soy sauce, pour them into a plate and pour some sesame oil on them.

I was going to cook some potatoes, but after thinking about it, the content of corn and green bean starch in miscellaneous vegetables was enough, so I didn't cook potatoes.

Press a hole in the center of the meat pie before frying it. From the tutorial, the purpose of doing this is to prevent the meat pie from burning in the middle and being unfamiliar around it when frying. Then, light the fire and pour the oil. When the oil is hot, start frying meat pies.

However, when frying meat pies, I don't know if the meat is different. I feel that even if the fire is set to a minimum, it is still easy to explode. But there will still be a lot of gravy when you poke the meat pie with chopsticks. In that case, there should be no problem.

After the patty was barely fried, I began to make sauce. Worcester sauce, tomato sauce, mustard seed sauce, cooking wine, butter and black pepper were used in the tutorial, but I didn't use butter when I saw there was a lot left. Besides, I didn't know what Worcester sauce was before, but I found that it and mustard seed sauce were not to my taste, so I decided to make my own sauce.

Add two spoonfuls of tomato sauce, one spoonful of soy sauce, one spoonful of cooking wine and some water to the remaining oil. When the fire boils, simmer it with low heat. When you feel better, turn off the fire and pour it on the patties.

In this way, a hamburger meat is finished.

Because of this dish, my long-cherished knife and fork finally came in handy. And the sauce poured on it just covers the burnt place, which is interesting.

I used to worry if it was cooked inside, but it was cooked inside.

Still very successful.

At noon the next day, I made another hamburger. However, the side dish this time is Chinese cabbage and buckwheat noodles, and the sauce has also been adjusted: a spoonful of tomato sauce, a spoonful of soy sauce, a spoonful of soy sauce, a spoonful of cooking wine, a spoonful of oyster sauce, a little sugar and a little water.

This time, I think the sauce is better in color and taste than last time.

The only drawback is that the meat is still burnt. I think it should be the meat.

In addition, I went to the supermarket to buy clothes today and found that Wal-Mart in Hongyang Plaza has white onions, which are a little more expensive than red onions.
