What's the difference between red rock candy and white rock candy?
Rock sugar is formed by dissolving hot refined saturated sugar solution, removing impurities, boiling and finally crystallizing. White rock candy belongs to single crystal rock candy, because it is decolorized and bleached with sulfur dioxide after many processes. Red rock candy is basically polycrystalline rock candy made by traditional technology. Without complicated decoloration treatment, the cross sections of polycrystalline and single crystal are different.
2. Different uses
Because red rock candy is not decolored, it is dark in color and is generally used to color food, such as sweet and sour pork ribs and braised pork. While white rock sugar, most people prefer to make drinks to increase the flavor and sweetness, and it is widely used in food processing.
3. Different nutrients.
Because red rock candy has not been decolored, the content of natural ingredients in sugarcane is much higher than that in white rock candy, and the sweetness is much sweeter than that in white rock candy, so it is more nutritious and healthier. So more and more people choose yellow rock candy.
4. Different nutritional effects
White rock sugar itself can moisten dryness, which is good for moistening lung. It has the effects of nourishing yin and benefiting qi, relieving cough and resolving phlegm, and is more suitable to be added like some stews.
Although there are many impurities in red rock candy, its nutrients are well preserved. It has the effects of invigorating qi, relieving middle warmer, helping spleen to promote digestion, enriching blood and removing blood stasis, and also has the effects of dispelling cold and relieving pain.
