Huaizhuang-Traditional Aged Brew is made by Master Chen Qilong, one of China's top ten winemakers. Only the local small red sorghum of Maotai town, seasonal red sorghum, thin skin, full grain, can withstand many cooking is the best material for brewing, using Kunsha process (the top of the sauce wine process) four or five pounds of small red sorghum in order to come out of a catty of wine.
