How to make Plum Tofu
Ingredients for moldy tofu
One piece of gypsum tofu (2 pounds) Chili powder and pepper salt (2:1) in moderation

Steps 1
Prepare all the raw materials (preferably gypsum tofu, more hard), place the tofu in a ventilated room overnight to air-dry. It's better to use gypsum tofu, which is harder and moldy), and put the tofu in a ventilated place in the house to air-dry the water for a day and a night. (Be sure to air-dry the water, otherwise the molded tofu will not only be soft and crumbling, but also easy to grow green hair and black spots, mold bad.)

Slice the tofu into 3-centimeter cubes and place them in a washed and drained basket, with some space between them.
Step 3
Find a tray a little larger than the basket, and put two chopsticks on it to elevate the basket, so that it can hold the water that comes out of the tofu during the molding process.
Step 4
Find a cotton towel to cover the basket, which can keep out the dust and wind (the moldy tofu will be black and unattractive after seeing the wind), and keep the tofu in the basket warm. Place it in a corner of the house and wait for it to grow mold.
Step 5
Day 1: Yellow spots appeared on the surface of the white tofu, which my mother said was the start of mold activity. Day 2: The white tofu turned yellow and the yellow spots deepened in color. The third day: the body surface of the tofu began to seep outward yellow juice, my mother said mold tofu is to mold this layer of yellow juice, yellow juice secretion more and more thick, mold tofu is delicious, only counted mold success. (The market moldy tofu in order to increase production, generally only let it mold to this degree, we do it ourselves let the tofu more mold, delicious!) The fourth day, because the SD card of the camera is damaged, did not take pictures, until -- 10th day: the tofu completely turned yellow-red, thick yellow juice wrapped around the tofu, the tofu also looks warmer and softer, and exudes a special moldy soybean aroma. At this point you can use a chopstick pew pew, test the center of the tofu is soft and firm, if so, you can stop mold, so as not to continue to mold, the tofu will rot and not mold. (This also depends on personal taste, some people like moldy tofu hard, some people like moldy tofu soft, can be completely according to personal addiction to choose moldy tofu molding time duration.)
Step 6
Mix the chili powder and salt according to the ratio, according to the saltiness of the chili powder to add salt or other spices (such as thirteen spices, cumin powder, etc.).

Prepare a sealable container for the moldy tofu, the traditional method is to use a tile jar, we can use a glass jar with a lid. Roll the molded tofu in chili powder (in some places, the molded tofu is first passed through white wine), and then arrange the pieces neatly into a clean, dry vessel. (The tofu should not be too close to each other; the volume of the moldy tofu will expand as it continues to ferment, and being too close together is not conducive to flavor penetration, and it is not easy to pinch the moldy tofu.)
Step 8
After placing the tofu, you can sprinkle some salt on the surface of the ingredients, and then pour in sesame oil, if you want to spend money, then let the sesame oil completely soak the moldy tofu, imagine that the moldy tofu soaked in sesame oil is how fragrant Oh! (Jiangxi farmers use tea oil, tea oil will be boiled through thoroughly cooled and poured into the moldy tofu, that is a kind of flavor, again play your taste buds imagine it!)
Step 9
Drizzle in white wine, cover with a sealed lid, and leave it at room temperature for 3-5 days, so that it continues to ferment into the flavor, and finally put it into the refrigerator. The moldy tofu made in this way will not be bad for a year. (It is best to use a strong flavor of the high degree of white wine, I used 45 degrees of the four special old kiln, so to moldy tofu evenly poured 1 ? spoons).
