3. Top grade-Gongmei

New craft white tea is a specialty of Fujian, mainly produced in Fuding, Zhenghe, Songxi and Jianyang. New white tea, referred to as new white tea for short, is made by withering and gently kneading according to the processing technology of white tea. The production methods and quality of different producing areas are slightly different. Fuding Silver Needle was also called "North Road Silver Needle" earlier. When picking, choose a cool sunny day, spread the fresh needles thinly on the withered curtains, and expose them to the sun. When the water content reaches 10-20%, spread them on a baking tray (the baking tray is lined with paper towels to prevent the buds from burning and turning yellow), and dry them with slow fire (40-50℃) until they are completely dry. Bai Hao Silver Needle is also called "Lu Nan Silver Needle". Fresh needles are spread on a water curtain, placed in a ventilated place, dried until the water content is 20-30%, and then moved to the hot sun to dry. Sunny days can also be sunned first and then. Every autumn and winter, the management of fertilizer cultivation should be strengthened to cultivate strong buds for tea trees with white hair and silver needles. Tea buds in summer and autumn are thin, which does not meet the requirements of raw materials of Baihao Yinzhen, and are generally not collected.

The picking of white silver needles is very meticulous and the requirements are extremely strict. It is stipulated not to pick in rainy days, wet dew, fine buds, purple buds, wind-injured buds, artificial buds, insect-injured buds, happy buds, hollow buds and diseased buds, which are called ten. Only the fat single bud head is picked, and if the new bud with one bud and one leaf is picked, only the bud heart is picked, commonly known as needle pulling (that is, the bud on one leaf is pinched off, the raw material of silver needle is pulled out, and the remaining stems and leaves are used as white tea or other teas with other colors).
