Pickling of Xinjiang mutton skewers

The curing and practice of Xinjiang mutton kebabs are as follows:

Preparation materials: 500g of leg of lamb, a handful of pepper, half a green onion, 5g of salt, 20g of chili powder, 30g of cumin powder, 4g of spiced powder, 4g of pepper powder, 0/5ml of oil/kloc-,a spoonful of corn starch, a spoonful of compound soy sauce and a little of chicken powder.

Production steps:

1. Cut the mutton into small pieces, put a proper amount of water in the pot, add a handful of pepper and cook for five minutes. Skim the oil from the pepper, let the water cool, and soak the onion and ginger for half an hour.

2. Pour the pepper water into the mutton, and the amount of water is flush with the mutton. Cover with plastic wrap and refrigerate for more than four hours. This step can help to remove the smell of mutton and further tenderize mutton.

3. Pour onion Jiang Shui and choose onion Jiang Ye. Add 5g Chili powder, 2g allspice powder, 2g Zanthoxylum powder and 5g cumin powder.

4. Pour another spoonful of compound soy sauce (homemade). If there is no compound soy sauce, use ordinary soy sauce instead.

5. Add a small spoon of chicken powder and mix well. Cover with plastic wrap and marinate for more than six hours.

6. Pour the marinated meat into the cooking oil and mix well.

7. Pour another tablespoon of corn starch to ensure that each piece of meat has flour on the surface. The purpose of this operation is to make the surface of the meat form a layer of coke shell, which makes it taste tender and smooth.

8. Use bamboo sticks to string the meat together in the form of fat and thin. The baking tray is covered with a layer of tin foil and a layer of thin oil, the mutton skewers are covered with tin foil, and then a layer of thin oil is brushed on the surface of the mutton skewers. Preheat the oven to 220 degrees and bake for 7 minutes.

9. Mix the remaining cumin powder, Chili powder, spiced powder and pepper powder in the scale.

10. Sprinkle half on the surface of mutton kebabs, and then bake in the oven for 3-5 minutes. After baking, sprinkle the other half of the spice powder on the surface of the kebab and serve.
