Dishes of Three Snake Soup

Three snake soup is a traditional Han Chinese dish in Guangdong and belongs to Cantonese cuisine.

Snake delicacies are a common soup, and restaurants in Guangzhou have had this dish a hundred years ago.

Said to be three snakes, they generally refer to cobras, kraits and banyan snakes.

Peel the snake meat (eat it after cooking, be sure to remove the snake scales, otherwise you will have diarrhea). Boil it with ginger and green onion, then simmer it with pork bones and old chicken. Add pepper, ginger, etc. when simmering, about one hour.

The snake meat can be disassembled after one hour. After the snake meat is disassembled, continue to cook for five or six hours. Add chrysanthemum petals before serving.

Such a bowl of Three Snakes Chrysanthemum Soup tastes very sweet. The white snake juice is full of the fragrance of snake meat, and the yellow chrysanthemum petals have the fragrance of flowers. After several bowls, it is still very refreshing without any greasy feeling.
