How to make rock sugar
Material: 100kg high-quality sugar, 35kg clean water.
Cooking method:
Before boiling the sugar solution, add cooking oil into the interlayer of the boiling pot, then pour the prepared sugar solution into the top pot and cook the materials with fire. When the sugar solution boils for 5-6 minutes, add 2kg of saturated alum aqueous solution at room temperature, stir while adding, measure with a thermometer, stop when the temperature in the sugar solution rises to150 degrees Celsius, and cool before cooking. The optimum pot temperature 1 15~ 12 zero degrees Celsius.
Crystallization method:
Put the sugar solution out of the pan into a plate, put it on a hot kang and cover it with a clean quilt. The intraday temperature will be maintained at about 90 degrees Celsius that day, and then the temperature will drop by 1 degrees Celsius every day until the fifth day. If the temperature is not enough, you can increase the fire to raise the temperature of the kang. In general, sugar solution is neither afraid of cold nor heat during the whole crystallization process. Because most of the crystal water is gasified, the greater the gasification, the higher the crystallization rate of old rock sugar.
Storage:
1, rock sugar should be kept in a cool and ventilated place because it is easy to absorb water and get wet.
2. If the rock candy is found to be damp, it can be dried by an electric fan or exposed to the sun until it is dry.
3. If you find water on the surface of rock candy (that is, sticky), you'd better not eat it, because it's inconvenient to handle at home and easy to breed bacteria.
Suitable food:
Suitable for all ages, especially those with dry lung cough, dry cough without phlegm and expectoration with blood should eat rock sugar in moderation, which will help relieve symptoms. About 20 grams a day. Mix the original flavor and taste of black tea, coffee and food with rock sugar. Rock candy has a refreshing but not greasy sweetness and can be used to cook various nourishing foods.
Avoid eating:
