Seasoning: warm water150g (about 40-50 degrees), a little vegetable oil (or cooked oil).
Tools: 1 6-inch cake mold, appropriate amount of plastic wrap.
Start cooking?
Step one? Mix brown sugar water? First, take a large clean basin, add warm water of about 150g (it is suggested that the temperature is about 50 degrees, and when yeast is added, the temperature just drops to about 40 degrees, which can maximize the activity of yeast), then add 70g of brown sugar, stir it with a spoon for 2 minutes, and stir it evenly until the brown sugar is completely melted, and then the brown sugar water can be prepared.
Step two? Activate yeast? Then add 4g yeast powder into brown sugar water, continue to stir with a spoon, and let it stand for 5 minutes to activate yeast activity (warm water of about 40 degrees can stimulate yeast activity well).
Step three? Chop up the ingredients? While activating yeast activity, let's treat the ingredients, take 40 grams of clean dried cranberries, cut them into pieces with a knife (not too fine, leave some flavor) and put them in a bowl for later use.
Step four? Mix it into batter? At this time, the yeast has been activated. In addition, take a large clean basin, add 200 grams of flour, then add the prepared brown sugar water, and stir it quickly with chopsticks until it becomes a uniform and delicate batter without pimples (stir while adding, to avoid adding it all at once, or there will be too many pimples). ?
Step five? Mix in the ingredients? Then continue to add all chopped dried sour fruits into the mixed batter, and continue to stir with chopsticks for 2 minutes until they are completely blended and evenly used.
Step six? Sealed fermentation? Take a 6-inch cake mold (you can use a rice cooker if you don't have it), pour some vegetable oil into it, and then spread the oil evenly in the mold with a brush. After spreading evenly, pour all the stirred batter into the mold, seal it with plastic wrap, and let it stand in a warmer place for natural fermentation. Ferment for 30 minutes.
Step seven? Sprinkle sesame seeds? : ferment until the mold is 9 minutes full (about 2.5 times the original size), remove the plastic wrap, grab a handful of white sesame seeds, spread them evenly on the surface of the batter, decorate them and add fragrance.
Step eight? Steaming out of the pot? : Take a steamer, put enough water in it, then directly put the white sesame steamed cake (note that this is a cold water cooker, which will be explained later), close the lid and steam for 30 minutes, turn off the fire, continue stewing for 5 minutes, and finally take out the inverted mold and cut it into pieces. ?
