Wash the raw papaya, peel off the green skin and cut it in half.

Cut papaya into equal slender strips, then cut into rectangular cubes of about 5 mm, and put them in a basin for later use.

Put a spoonful of salt on it. Rub the diced papaya and squeeze the water out of it with salt. Marinate for about three hours.

Rinse diced papaya with water, remove salt, and then dry in the sun.

Wait until the diced papaya is 50% to 60% dry.

Mix the sauce well, add some soy sauce, oyster sauce, thirteen spices, pepper and spicy soy sauce, add garlic and half a spoonful of high-alcohol liquor, and mix well.

Put the diced papaya into a clean and waterless bottle.

Pour the sauce on it and stir it evenly with chopsticks, so that every diced papaya can be stained with the sauce.

Leave it for a few days, let the diced papaya absorb the sauce, and you can eat it.
