Traditional extraction rate of natural pigment

Purple cabbage was extracted with distilled water, and the pigment of purple cabbage was extracted by ultrasonic flooding. The thermal stability, light metal ions and the stability of pigment were affected. The results showed that the optimum extraction conditions of purple cabbage pigment were as follows: distilled water extraction, liquid-solid ratio of 40: 1 (mL: g), pH 7, ultrasonic-assisted power of 80% and extraction time of 50 min. Under these conditions, the extraction rate of purple cabbage pigment was 18.2%, which greatly shortened the extraction time compared with the traditional process. The analysis of its properties showed that the stability of lilac cabbage pigment was good; Very stable at room temperature, and the degradation is faster when the temperature rises; K+,Na+,Cu2+,Mg2+,Zn2+and Ga2+basically have effects on the pigment in plasma, while Fe3+,Al3+and Sn2+have certain effects on the stability.
