How to make Traditional Fried Sugar Water Chestnut Cake

Add sugar to a pan and stir-fry it until it melts.
When the sugar has a caramel color and is completely melted add 750ml of water and simmer to make sugar water. (Warm water can be used for this step to shorten the simmering time.)
While the sugar water is simmering, dissolve the water chestnut powder in 750ml of cool water, stir well until there are no particles, and peel the water chestnuts and slice or pat them.
When the sugar water comes to a boil, add the water chestnuts and cook for 1 to 2 minutes. (Ignore this step if you prefer a crispier texture, and add the hoof meat and mix well before steaming).
The next step is the most important and crucial one - the batter.
Turn down the heat on the stove and add about a third of the batter to the sugar water and stir quickly to form a paste, then add all the remaining batter and stir well. Pour into a greased mold and steam over high heat for 20 minutes, then cool and slice to serve, refrigerated or pan-fried.
