Method for making handmade zongzi
The first kind: jiaozi with red bean paste.
Ingredients required: 500g round glutinous rice, red bean paste 100g, zongzi leaves 16 pieces, and 8 zongzi strings.
Step 1: Wash the glutinous rice first, soak it in water for 2 hours, then drain the water, then wash the leaves and soak them in water for later use.
Step 2: the bean paste is also divided into 8 parts, and the glutinous rice is also divided into 8 parts, and it is kneaded into strips.
Step 3: Fold two zongzi leaves into a triangular bucket shape, with the head and tail overlapping. First put half the glutinous rice, then add the bean paste stuffing, then spread half the glutinous rice on it, wrap it into a long zongzi, and then tie the zongzi rope.
Step 4: Put the zongzi into the pressure cooker, add a proper amount of water, spill the zongzi for 2 inches, turn the water to low heat for 20 minutes, then turn off the fire and naturally deflate.
The second kind: fresh meat jiaozi.
Ingredients: 500g glutinous rice, soy sauce 1 teaspoon, 250g pork, soy sauce 1 teaspoon, sugar 1 teaspoon. Cinnamon 1 tablet, star anise 1 tablet, cardamom 2 tablets, fragrant leaves 2 tablets, clove 2 tablets, pepper 1 tablet and dried tangerine peel 2 tablets.
Step 1: Add 2-3 cups of light soy sauce to all seasonings. After the fire boils, turn to low heat, keep it slightly boiling for 5 minutes, and turn off the fire.
Step 2: Cut pork belly into small pieces, add soy sauce and sugar and mix well. Seal the surface with plastic wrap and marinate it in the refrigerator at night.
Step 3: Soak 500 grams of glutinous rice in soy sauce and enough water overnight, then filter out the excess water, add the right amount of salt and mix well to taste.
Step 4: soak the dried zongzi leaves with clear water in advance, and take a leaf and fold it in half from the middle to form a funnel shape. If you want to wrap it bigger and one leaf is not long enough, you can make it by overlapping two leaves, fill the funnel shape with a little glutinous rice prepared in the third step and gently compact it with a spoon.
Step 5: Put the bacon in the middle.
Step 6: Spread glutinous rice, cover with stuffing, fold the remaining leaves, wrap them, and then tie them with thread.
Step 9: After all the jiaozi is wrapped, put it into a pressure cooker, add water until it is no more than 2 inches long, boil the pressure cooker on low heat for 20 minutes, and then open the lid after natural deflation.
