How to make Chaoshan square cakes?
In Chaoshan cake culture, many people cherish the idea of patriotism and love for their hometown. For example, the fork sesame seed cake in Chenghai originated in the late Ming Dynasty. A patriotic mother saw that her son had become a traitor and was ashamed to meet people. She had to follow the example of the ancients and fled to the sea, preferring to die rather than eat "Zhou Su", which she ate while drifting. By the end of the Qing Dynasty, Chaoshan people entrusted this patriotic thought to Lin Zexu. It is said that he once punished foreign devils with a kind of taro cake that was cold outside and hot inside. In order to educate future generations, Chaoshan people also put this patriotic thought into food and passed it on from generation to generation.
Practice: first grind glutinous rice into powder, put it on a plate with sugar and lard, cook and steam it, and then sprinkle sesame seeds evenly on it. Then cut the steamed fork sesame seed cake into round, square, prismatic and finger-sized strips or other shapes, and put them into boxes or pottery bowls with diverse and beautiful shapes. When the fork sesame seed cake is fresh, its color is white, crystal clear as amber, smooth, fat but not greasy. Sprinkle a few drops of frozen sherbet on the fork cake, which is sweet and fragrant, and the more you eat, the better it will be.
