What is the difference between Chongqing noodles and Dan Dan noodles ?

Chongqing xiao mian and dan dan mian are two common types of noodles in Chinese Sichuan cuisine. They share some similarities, such as being thin noodles made from flour and water, and are usually served with seasonings such as chili oil and crushed peanuts. However, they also have some distinct differences.

First of all, Chongqing noodles are more noodle-like and soft, while Dan Dan noodles are thicker and chewier. Secondly, the seasonings they use are also different. Seasonings for Chongqing noodles usually include bean sprouts, scallions, chili oil and crushed peanuts, while the seasonings for dan dan noodles are mainly chili oil, sesame paste, garlic paste, soy sauce and black vinegar, which have a stronger flavor.
