West Lake vinegar fish is a famous food in Hangzhou, which is usually the main course of Hangzhou. As the name implies, vinegar is indispensable for vinegar fish in West Lake. The main ingredient is grass carp, and vinegar is just one of the ingredients. Its other ingredients are rice vinegar, seafood soy sauce, sugar and water starch.

1. Clean the grass carp first, cut the fillet in half with a knife, then cut the fish back obliquely for 3 times, deeper but not cut off, and put it on a plate for later use.

2. Add water to the pot. After boiling water on high fire, add the fish with changed knives, cook for 2 minutes on medium fire, remove and control drying.
