Characteristics of Henan Food Culture

Henan noodles, also known as oven noodles and Henan steamed noodles, are made of various ingredients, stewed soup, noodles and side dishes by steaming and mixing. It is said that it has an indissoluble bond with Baima Temple. According to the old Luoyang people, the word "halogen" in noodles is homophonic with the word "road", meaning "noodles sold by the roadside".

Baima Temple was built in the 11th year of Yongping in the Eastern Han Dynasty (AD 68). It was the first temple built after Buddhism was introduced into China, and was praised as "the ancestral temple of Buddhism" by Chinese and foreign Buddhist circles. It is said that after the completion of the temple, people rushed to tell each other that more than a thousand people came to worship at Baima Temple every day, and the catering business around Baima Temple also flourished. At that time, one of the most popular fast food was Luoyang noodles. Selling stalls on the roadside was called "pavement" at that time. Take out bundles of noodles from the cage and put them in a bowl. Add sesame oil, fragrant sauce, shredded melon, etc. They are soft and delicious, and people can eat them as soon as they arrive. They are very popular. With the improvement of people's living standards, many new cooking techniques have been integrated into the "pavement", which was renamed as noodles.

In China's catering culture, pasta culture has a long history, and noodles make people appreciate the people's feelings, folk customs and people's feelings in old Henan. Henan people have a soft spot for noodles, which are indispensable for both hotel guests and family tables. Because of its convenience and simplicity, it has become one of the table staple foods of Henan people.

Henan noodles combine folk cooking methods with modern cooking techniques. With the development of the Internet, they have entered major office buildings in the Central Plains and become one of the necessary lunches for white-collar workers.
