Maltose Hubei name
Maltose, also known as "sesame sugar" in Hubei, is a sugar food made from rice, barley, millet or corn by fermentation. It is a traditional nostalgic snack in Qianjiang area.
During the Spring Festival in the twelfth lunar month, every household "cooks sugar" and adds various ingredients based on maltose to make sesame sugar, fried rice sugar, sesame sugar, peanut sugar, ginger sugar and so on. All kinds of delicious sugar and fried rice are packed in jars, which are delicious snacks for guests and precious snacks for children and the elderly at home during the New Year.
Maltose is not sweet, there are two kinds, soft and hard. The soft one is a yellowish brown viscous liquid with high viscosity, which is called mucilage. Hard fudge is made by mixing with air. It is a porous yellow-white sugar cake called white caramel, and it is called sesame sugar in Qianjiang. Maltose is a disaccharide with white needle-like crystals, which is easily soluble in water. Sweeter than sucrose, it has the effects of strengthening the spleen and stomach, moistening the lungs and relieving cough, and is a food suitable for all ages.
