Authentic Zhejiang beef offal noodles
Composition details
200g of beef brisket, 200g of tripe, 200g of beef tendon, 200g of star anise, two onions, one ginger, one dried pepper, two teaspoons of salt, one tablespoon of white wine, one tablespoon of soy sauce, one tablespoon of cooking wine, one teaspoon of allspice powder and one third of chicken essence.
Making steps of beef offal noodles
1 Prepare raw materials.
2 Add water to the pot, add half a slice of ginger and mash it, pour in the brisket and boil it together, add white wine and boil it again, then take it out, wash it and control it to dry.
3 Cut tripe and beef tendon into strips.
4. Drain and dry.
5 Add oil, ginger slices, garlic, star anise, dried pepper and beef brisket, and stir-fry together to give a fragrance.
6 Add tripe and beef tendon and stir well.
7 Add soy sauce, cooking wine and spiced powder and stir well.
8 Add enough warm water, add onion knots, boil over high heat and stew for 20 minutes. Add salt and continue for 20 minutes. Add chicken essence to taste.
Cook noodles and blanch them with your favorite vegetables.
10 Drain the noodles and scoop the beef offal with soup into a bowl.
