Noodles with minced pork sauce are the iconic food in Shaanxi.

Shaanxi has a long history and culture. Minced meat noodles are the symbolic food in Shaanxi. It originated in Xifu, Qishan, Baoji, Shaanxi. Its taste is mainly sour and fragrant, and the ingredients are very particular. Yellow egg skin, black fungus, red carrots, green garlic sprouts, white tofu and other materials are both good-looking and delicious.

There are two kinds of noodles with minced meat, one is Qishan noodles with minced meat and the other is Fufeng noodles with minced meat. The first color is red, bright and slightly spicy, and the second color is golden yellow and sour. The two methods are similar, mainly the difference of kimchi. Qishan noodles with minced meat are mainly leeks and garlic seedlings, and Fufeng noodles with minced meat are mainly chopped green onion. In fact, there are many noodles in Shaanxi. As the saying goes, "one side of the soil and water support one side of the people", Laoshan's love for noodles is self-evident.
