What are the sugary foods
Sugar-Containing Foods
Foods that contain sugar have always played a very important role in our diets.DOUBLE_QUOTATION SugarDOUBLE_QUOTATIONThe word DOUBLE_QUOTATION is derived from the Greek glukos (DOUBLE_QUOTATION mild DOUBLE_QUOTATION), which refers to various sugars (fast or chronic sugars).
In addition to sugar in powdered or lump form, white sugar, brown sugar and icing sugar, the sugar family includes all foods with a sweet taste, such as jams, honey, jellies, candies and chocolates.......
If a nutritionally balanced diet is adopted and a certain amount of sugar is consumed in moderation, sugar and sugar-containing foods are not harmful to human health and do not cause certain diseases simply by consuming sugar. On the contrary, if sugar is consumed in excess or too often, it is responsible for certain diseases (obesity, diabetes, dental caries ......) in people who are susceptible to these diseases.
Sugary foods are not necessary for a balanced human diet, but they add a lot of pleasure to three meals a day. Whether young or old, sugary foods always call for a good appetite.
People's consumption of sugary foods has been on a steep upward trend until the end of the seventies, then decreased slightly, and then remained relatively stable (26 grams per person per year in 1953, 40 grams in 1974, and 34 grams in 1995). Note, however, that if there has been a downward trend in direct sugar intake in the last two decades, there has been an increase in sugar intake from beverages and sugary foods.
Sugars
l Sugar (sucrose) comes mainly from sugar beets or sugar cane and is found in a wide range of foods. Sucrose consists of glucose molecules and fructose molecules. This chemical structure explains why sucrose is quickly absorbed by the body and provides it with promptly available energy. Sucrose is known as a DOUBLE_QUOTATION simple DOUBLE_QUOTATION sugar.
lSucrose produces a sweet flavor, so it is used as a reference value for measuring sweetness, which is recorded as 1. In fact, there are other DOUBLE_QUOTATION sugars DOUBLE_QUOTATION in nature, such as fructose, which is found in a variety of fruits, and which is sweeter than sucrose (its sweetness index is 1.3). Lactose is a sugar contained in milk, and its sweetness is less easily tasted (its sweetness index is 0.25).
l In addition to its sweetness, sucrose contains other properties:
- It gives rise to a dough with a breathable structure (butterball cake).
- It protects jams, jellies and candied fruits from microbial decay
- Controlling the crystallization process of sucrose produces a wide variety of candies with different colors and properties.
-Sucrose provides the crunchy tissue structure for chocolate and gives shape to ice cream and frozen fruit juice drinks.
Chocolate
Chocolate has certain properties. Cocoa has a complex composition that includes at least 800 molecules, among them hydroxytryptamine, theobromine (a close neighbor of caffeine) and phényléthylamine. one by one, these substances explain why chocolate is anti-nervous, invigorating and anti-fatigue. These effects are enhanced by the abundance of magnesium (112 mg per 100 g). 100 g of chocolate also contains 516 kcal, 4.5 g of protein, 58 g of sugar and 30 g of lipids. For the health of the human body, it is useless to consume too much chocolate. For better enjoyment, it should be chewed and savored slowly in small portions.
Honey, Pollen, Royal Jelly
Honey, pollen and royal jelly ...... are all foods associated with bees. They are composed primarily of sugar (typically 80%) and traces of protein, but contain no lipids. They are generally consumed by spreading natural honey, pollen or royal jelly on slices of bread, or cooked and accompanied by meat or fish, or as an ingredient in syrups and candies.
-Honey has a somewhat higher sweetness function than sucrose (its sweetness index is 1.25 to 1.35) because it is rich in fructose. But honey contains few vitamins and minerals and its caloric index is higher.
- As for pollen, it has been traditionally used to prevent body slimming and body thinning. The use of pollen therapy for a month is beneficial in improving protein synthesis and promoting weight gain, but it does not correct body slimming.
-Royal jelly is rich in vitamins B class, PP, B9 and minerals (copper, iron, phosphorus, silicon dioxide, sulfur ......), which are in fact general tonic, in addition to their ability to slow down cellular aging.
Jams
Jams come from in the preservation of fruits. Fruit and sugar are mixed together and cooked, and under the action of pectin (sugar molecules passing through the food fiber), it is cooled and gradually solidifies and thickens. Jam contains almost 70% sugar (equivalent to 264 kilocalories in 100 grams of jam), trace vitamins and minerals.
Sugar content in sugary foods
Sugar (100% sugar)
Candy (95% to 98% sugar)
Honey (75% sugar)
Jam (70% sugar)
Chocolate (55% to 60% sugar)
