Why are handmade noodles hollow?
The manufacturing method of hollow handmade noodles not only involves many manufacturing processes, but also requires careful efforts in each process, and the whole manufacturing process takes about 20 hours to complete. Making hollow handmade noodles can be said to be a very lucky and bitter job.
The processing flow of hollow handmade vermicelli is roughly divided into 14 steps, including kneading dough, dark noodles, slicing, rubbing large strips, rubbing two strips, wire, putting chopsticks, yin strips, dividing chopsticks, re-yin strips, taking out chopsticks, putting them on a shelf, drying and sealing.
In the production process, workers mix refined flour with proper amount of oil and salt, knead it into thin strips, wear sticks at both ends, hang it on a high wooden frame after the oil and salt are fully infiltrated, and slowly pull it down to a certain length with both hands to form hollowing. Then let it fall naturally, dry it in the sun, and only take the hollow part in the middle to become a hollow handmade noodle.
