Where does Qingshan hemp baking cake belong?

Hubei Qingshan hemp baking cake, known as the traditional pastry in the middle and lower reaches of the Yangtze River, has a history of nearly a hundred years. It not only has the characteristics of fragrant, loose, crisp and refreshing rice cakes, but also has the sweet and soluble style of cloud cakes. Ma Baked Cake is made of glutinous rice from yingshan county, osmanthus from Xianning, black sesame from Huangmei and fine sugar. It tastes like hemp seed and osmanthus, which is loose, sweet, crisp and refreshing.

Qingshan hemp scone has a history of nearly a hundred years. According to legend, sesame seed cake first appeared in the late Qing Dynasty. At that time, Hanlin, who worked for the royal family of the Qing Dynasty, would come to Beijing with local products every year after the Spring Festival and give them to each other for tasting. Hemp baked cake is favored by Hanlin and royal dignitaries because of its exquisite materials, good color, fragrance and shape. As for who made the baked sesame seed cake at that time, there is no way to verify it. After the Revolution of 1911, this kind of hemp cake baking factory, which integrates production and sales, appeared in competition along the Yangtze River from Qingshan to Huangshi. At that time, there were six or seven factories and shops in Qingshan town, such as Jiang, Wan Xingheng, Xue, Zhang, Zhang Ruru and He Ji, which produced and operated hemp baked cakes. With Jiang as the earliest, there are four masters in charge, and the business is booming. Wan Xingheng is the biggest. He invited Chen Mingqing, Zhu Poheng, Zhang Youting and Lv Yitai from Yangluo to make hemp cakes. Because both Jiang and Wan Xingheng smoked, the two shops closed down one after another before the Anti-Japanese War. 1938, after the Japanese army invaded Wuhan, the "Five-Road God of Wealth" in Hankou co-founded Fuxing Workshop for making baked biscuits, which was run by Zhang Langru. The staff are Su Kuncheng, Tang Yichang, Luo and Su. After the victory of the Anti-Japanese War, Zhang Langru bought Fuxing Square for 30,000 silver dollars, renamed it Hongxing grocery store, and hired two masters, Wang and Rong Zhongliang. The workers included Zheng Mingxi, Cao Fuyuan and Hu Dingguo. Later, Zhang Langru's nephew, Zhang Fengming, took over the charge of Hongxing grocery store, jointly operated it with Zhang and Zhang, and renamed it Hongxing Food Factory in order to expand reproduction. During this period, several other factories and shops that produce and operate hemp baked cakes also closed down because of low profits and bad business. Only Red Star has a large capital and its production has expanded slightly. 1949 After the liberation of Wuhan in May, other factories and shops closed down one after another, but Hongxing Food Factory survived and maintained a small amount of production. From 65438 to 0954, under the care of the people's government, Hongxing Food Factory not only did not close down, but developed into an enterprise with more than 20 employees, making both baked cakes and cakes. Sesame cakes have gradually entered the international market, producing 40-50 boxes a day (50 boxes each) and selling them to Southeast Asian countries through Hong Kong. At this point, sesame seed cake has formed a quality product, and it is one of Hubei specialty products which are well-known at home and abroad.

In the past, baked sesame cakes were all made by hand, and the requirements for raw materials were strict. Although the equipment is simple, the cake maker is meticulous, selects materials carefully, makes them carefully and stresses quality. The main raw materials are selected from the country of origin, and are refined from glutinous rice in yingshan county, osmanthus fragrans in Xianning, black sesame in Huangmei and soft sugar. Make 100 kg sesame cake, and the proportion of ingredients is: glutinous rice 40%, cotton sugar 40%, oil, black sesame, osmanthus fragrans and red (green) silk 20%. After blanking, mixing (repeated mixing of raw materials), pulping (compacting the cake powder put in the plate), stewing (putting the plate with the cake powder on hot water to heat it tightly), cutting (cutting into thin slices according to specifications with a knife), baking (charcoal fire baking) and other processes, the baked sesame cake is white, sweet, crisp and refreshing.

1955, the state decided to choose Qingshan as the WISCO base. In order to support the construction of WISCO, 28 people from Changjiang Food Factory set up a branch factory in Jiangjiadun (now Honggang City) in 1957, and put into production in May of the following year. 1959, with the approval of the superior, Qingshan Branch was handed over to Qingshan District, merged with the public-private Red Star Food Factory, and established the local state-owned Qingshan Food Factory in Wuhan. The new factory made full use of the past manpower and technology of Hongxing Food Factory, inherited and developed the production technology of sesame cakes, and also produced cakes, bread, sweets, biscuits and other products. However, due to the change of form and the lack of raw materials, these products are intermittent, and only hemp baking cakes have been insisting on production and sustainable development. 1965 added a cake press and a cake cutter, ending the history of manual shaping and slicing of baked cakes. From 65438 to 0967, through the efforts of cadres and the masses, the production technology was reformed, from charcoal roasting to electric roasting, and a small-scale continuous production of cutting, drying and harvesting was initially formed, which reduced the labor intensity of workers and improved the production efficiency. On the premise of keeping the original formula and shape, 1978 established the production line of baked wheat cake through technological innovation, which made the production of baked wheat cake embark on the road of modern production, greatly improved the output value and output, and increased the average daily output from more than 100 boxes to more than 400 boxes. Qingshan hemp baked cake has always been the best-selling cake in the market. Not only enjoys a good reputation inside and outside the province, but also has export tasks every year. 1962 and 1982 won the title of high-quality products in Hubei province twice. In 2006, Castle Peak Horse Baked Cake, Old Tongcheng Bean Skin, Wuhan Simmer Soup, Wuhan Zaozao, Cai Regan Noodles, Wuhan Mianwo and other 13 "traditional handicraft skills" were also selected into the "First List of Municipal Intangible Cultural Heritage" in Wuhan.
