Yulin flavor: Niuba

Yulin Niuba, commonly known as Niuba, is the most famous traditional snack in Yulin. The delicacy of Yulin Niuba has been recorded since the Qing Dynasty, and now it has formed the food industry of Yulin Niuba. Besides being eaten as a snack, the locals also regard it as a snack. Yulin people like to make cold dishes with cowhide and fried peanuts at banquets and festivals. In summer and autumn, the bean jelly in each stall is often paired with beef.

According to legend, in the Southern Song Dynasty, there was a salt merchant named Kuang who was exhausted by cattle on the way to transport salt. He couldn't bear to throw the cow away, so he salted the slaughtered beef and dried it into dried beef. When he got home, he cooked corned beef in a big pot. Then add some star anise, cinnamon and so on. When the beef was ready, the neighbor came to his house when he smelled the smell. Everyone says beef is very delicious. Later, people called the beef made in this way Niuba.

Yulin Niuba process is complex, mainly including four steps:

First, select the best beef and beef, wash the blood, cut it into long slices with a blade, put it in a basin, add 10 seasonings such as white wine, refined salt, soy sauce and sugar, mix well, and marinate for 1~2 hours.

Second: spread the marinated beef slices on the dustpan one by one and put them in the sun until they are 70% dry.

Third, put it in a pot, cook it until it is 80% ripe, add 12 seasonings such as star anise, tsaoko and cinnamon, stir-fry until fragrant, then put the dried dried meat in a medium fire, and simmer for 1~2 hours.

Fourth: after the beef is simmered, pick out ginger, garlic and spices, control the oil juice and let it cool.

Authentic Yulin Niuba has bright color, coffee-like color, bright oil, rich flavor, deep bright color, mellow smell, delicate and chewy meat, fragrant entrance and endless aftertaste. The meat is delicate and chewy, and it is full of fragrance after eating, which is a local must.

Because of its delicious taste, Niuba has gradually become a popular flavor food and a famous traditional flavor food in Yulin.
