First, traditional craft brewing

2. Peeling and squeezing: When brewing red wine, grapes are fermented with skins. When brewing white wine, grapes are squeezed and peeled before fermentation.

Through fermentation, the sugar contained in grapes can be gradually converted into alcohol and carbon dioxide.
Artificial dry yeast may be added during fermentation, and some wineries will use natural yeast.
4. Adding sulfur dioxide: In order to keep the fruity taste and freshness of wine, sulfur dioxide must be added immediately after fermentation.
Sulfur dioxide can prevent oxygen in the air from causing wine oxidation.
5. Aging: After the fermentation is completed, most of the bonus wines will be transferred to oak barrels for aging.
Some wines are not suitable for oak barrels, but stainless steel cans are used to ensure the aroma of fresh fruits to the maximum extent.
6. Clarification and bottling: In order to maintain the stability and beauty of wine structure, grapes need to be clarified, including natural clarification and manual clarification, and finally bottled.
Second, self-made brewing method
1. Shopping: When shopping for grapes, you can choose some mature grapes. These grapes are easy to ferment and the price is relatively low.
Recommended variety vitis amurensis.
2. Cleaning and drying: clean the grapes and dry them. After drying, you can install the altar. Remember to dry the jar.
3. Pinch grapes: Grab a handful of grapes and squeeze them hard, then put them in a jar and put sugar on them. The ratio of grapes to sugar is 10: 3, that is, 10 kg of grapes and 3 kg of sugar.
4. Sealed storage: seal the jar. If it is a ceramic jar, you can go to the shop where you buy yellow rice wine to order wine mud, add water and put a seal on it.
5. Secondary fermentation: put the filtered grape juice into a container for secondary fermentation.
This period of time also changes with the change of ambient temperature, and generally takes 15-30 days.
It can be drunk after secondary fermentation.
