Bacon's practice

Hunan smoked bacon raw materials

Homemade bacon with skin and pork belly is 2 Jin.

Appropriate amount of sea salt and pepper

Star anise 3 spiced powder 5g

High liquor 15ml rice (smoked material) is suitable.

Chenpi (smoked material) 2 large pieces of black tea (smoked material) 1 packet.

White sugar (smoking material) 30g cooking material

Bacon100g winter bamboo shoots100g

Ginger 1 garlic seed 3 tablets

Onion 1 root should be properly drained.

Cooking wine, 5 dried peppers.

The practice of Hunan bacon

Step 1

Add salt, pepper, star anise and spiced powder to the pan and stir-fry to give a fragrance (only salt is added to the bacon, so I improved it and smoked it to give a fragrance).

Second step

Rub the fried coarse salt on the pork belly.

Third step

Pour the liquor into the refrigerator and marinate for three days, turning over during the marinating process.

Fourth step

Leave it in the sun until the skin is dry but the inside is soft. It depends on the weather for about five days. The temperature is high these days, and it dries quickly. I'm afraid it's almost cooked.

Step five

Spread tin foil on the baking tray and cover with rice. Break tangerine peel into small pieces and mix well with black tea and sugar.

Step 6

Preheat the oven to 220 degrees, put the baking tray on the bottom layer, put the meat on the penultimate layer, cover the meat with tin foil and bake for about 20 minutes.

Step 7

Just bake it brown. Take it out and my husband immediately cut some pieces to eat. It smells so good.

Step 8

This is the second time to do it, and the first time to do two pieces. My husband thought it was much more delicious than what he bought, and I made another batch for fear of not having enough to eat. Fortunately, the weather is not hot these days, otherwise we would have missed the season.
