The cellar should be located in a leeward, sunny, high and dry place. Most wine cellars choose the horizontal excavation method of backing or slope parallel to the ground, and generally do not need deep excavation. Moreover, the cellar cover has also been changed into a cellar door, which is convenient for taking and putting food.

The type of cellar can be determined according to the number of seeds stored. For example, well pits are characterized by heat preservation and moisture retention, simple structure and material saving, and are suitable for construction in places with low groundwater level and solid soil layer. The method is to dig a round well with a wellhead diameter of 50 ~ 70cm, a depth of 4 ~ 5m and a bottom hole diameter of1~1.5m. After digging, dig a 1 ~ 2 warehouse to one side or both sides at the bottom hole. The warehouse is 1.5 ~ 1.7m high, 0.8 ~ 1.2m wide and 3 ~ 4m long. Build an earth wall 30 ~ 50 cm high around the wellhead to prevent rainwater from flowing in. You can also choose T-pit: it is suitable for construction in places with high groundwater level. First dig a walkway in the north-south direction, and then dig a T-shaped storage room at the north end of the walkway. The depth depends on the groundwater level, generally 2.5 ~ 3m deep, and the walkway 1 m wide and 2m long. The length of the storage room depends on the number of sweet potatoes, generally 4 ~ 5m long and1.5m wide.
